Eat Run and Be Happy

Lesson # 4 - When running with nut jobs, you have to eat well. Your body is going to need all the help it can get.


My resolution for 2009 is to fuel my body more wisely. There are a lot of fine things in this world and a good hamburger is among the best of them. Throw in a frosted mug of dark beer and you've found paradise. But I digress.

As I was saying, I want to try to improve my eatings habits. This is the first of my experients in health. I call it Peppy Pasta.



Ingredients:
3 cloves garlic, minced
3 Tbs olive oil
1 jar fire roasted red peppers, chopped and drained
8 oz sliced mushrooms
1 cup cherry tomatoes, halved
1 zuchhini and squash, sliced
whole wheat spaghetti
1/2 cup white wine
Crushed red pepper, salt and pepper and Italian seasoning
Parmasan cheese

Directions: Heat olive oil in large skillet. When hot, add garlic, mushrooms, zucchini and squash.

Saute 8 - 10 minutes. Add roasted peppers and cherry tomatoes. Mix well. Add wine and seasonings. Simmer 10 minutes or so.

In the meantime, cook spaghetti till just tender. Drain.

Pour vegetable mixture over spagetti and sprinkle with parmesan cheese. I didn't include meat in this dish, but the omnivore in me would also probably toss in a couple of meatballs (made with lean meat, of course).

Anyway, that was my first 2009 dinner. We'll see how tomorrow goes.
